Sweet Chile Sauce
16 ounces pineapple juice 1 cup vinegar2 cups sugar 1 whole head garlic, peeled and chopped finely
1 cup dried crushed red chiles 1/2 teaspoon salt
1/2 teaspoon ground ginger or 1 tablepoon fresh grated ginger
2-4 Tablespoons grated horseradish 4 tablespoons cornstarch mixed with 1/2 cup water
Slowly add half of the cornstarch slurry and cook until clear. Add more cornstarch mixture until sauce is as thick as desired.
This is my basic starter sauce, I rarely make it exactly the same twice in a row. you can add more or less chiles, horseradish, toasted sesame oil etc.
Pot Stickers
Pork Filling
1pound ground pork 1 pound Italian sausage, hot or mild
2 cups bread crumbs 1 half onion, finely chopped
2 cloves garlic, finely minced 2 eggs
Combine all ingredients thoroughly and cover with plastic wrap. Chill in refrigerator one hour. Fill using dumpling press by placing dumpling skin in press, moistening one half of outer edge of dumpling skin with beaten egg. Fill with I teaspoon filling and close dumpling press to crimp edges.
I find it much quicker, but not as pretty, to just place the dumpling skin in the palm of my hand, brush edge with egg, fill and fold and crimp outer edge closed in one movement. With a little practice it is very easy.
